"Paleo" Peanut Butter Cup "Ice Cream"
* One can of full fat coconut milk
* Three scoops of chocolate protein powder (Optimum Nutrition Natural Whey has no artificial sweeteners)
* Two teaspoons of Peanut Butter
* Blend - pour into plastic cups & freeze
*Microwave for 45 seconds (it is frozen solid)
* Enjoy
Not really"Paleo" but only ingredients are Coconut Milk, Protein Powder and Peanut Butter. You could substitute Egg Protein but I can't digest it. Two cans makes about 5 cups.
Perfect when you crave something sweet and have already eaten a pound of bacon. ;)
(for pudding just put in fridge instead of freezer)
